Ingredients
- 1 jar sliced beets (1 pound)
- 1 cup vinegar
- 1/4 cup sugar
- 1 teaspoon salt
- Dash of cloves
- 1 bay leaf
- 1 medium onion thinly sliced
Drain beets, reserve 1/2 cup liquid. In small saucepan combine beet juice remaining ingredients (not beets). Bring to boil. Reduce heat. Simmer 5 minutes. Pour over beets in jar. Refrigerate 2-3 hours. Makes 2 cups.
